Roxanne Wynne

Roxanne Wynne grew up in Greenville, NC and completed her Bachelor of Science degree, Masters of Science degree and dietetic internship at East Carolina University. Roxanne started her career as a Clinical Dietitian at Wayne Memorial Hospital in Goldsboro, NC. She then worked as a clinical dietitian with a long term care facility before returning to the hospital setting in her current position as Clinical Nutrition/Patient Services Manager at ECU Health Edgecombe Hospital in Tarboro, NC. Roxanne currently lives in Greenville. Outside of work, Roxanne enjoys horseback riding, running, gardening and boating.


Robin Tant

Robin Tant works at Pitt County Public Health Department as the Nutrition Program Director. She has been there for over 6 years. Prior to working in Public Health, Robin worked with clinical and food service management positions. She has been a Registered Dietitian for almost 15 years. She graduated from East Carolina University with a Bachelor of Science Degree in Nutrition and Dietetics and a Masters in Public Administration with a concentration in health.


Shannon Jackson

Shannon Jackson is the Clinical Dietitian Supervisor at Wilson Medical Center (WMC) where she started her career as a dietitian in 2003. She attended the University of North Carolina at Chapel Hill for her undergraduate Bachelor of Science in Public Health degree. She completed her dietetic internship at East Carolina University in the PCMH track. She resides in Goldsboro, NC, with her husband, Warren, her son, Colt, and Shih Tzu, Rocky. They have another little boy due in August 2014.


Lorraine Matthews

Lorraine Matthews, MS, RDN, LDN, is currently the Director of the Nutrition Program in the Columbus County Health Department in Whiteville, NC, and serves as the secretary of the North Carolina WIC Association. Prior to moving to North Carolina, she spent over 3 decades in the Philadelphia Department of Public Health in a variety of progressively responsible positions including acute care, long term care, corrections, community health programs and City administration. She also held adjunct faculty status in two universities in the Philadelphia area and has been a mentor and preceptor for numerous dietetic students, as well as students in public health, health education and related fields. She is the author of numerous professional articles in the broad field of dietetics, and has lectured around the country. Lorraine is an active member of the Academy of Nutrition and Dietetics and its North Carolina affiliate. Prior to moving to North Carolina, she also held various elected and appointed positions in the Philadelphia and Pennsylvania Dietetic Associations. Lorraine holds a BS degree in Food Science from Iowa State University and an MS degree in Nutrition Science from Drexel University. She completed her pre-professional training at the Philadelphia General Hospital.


Carolyn Pennington

Carolyn Pennington has been the Dietitian and a Child Nutrition Supervisor with Nash-Rocky Mount Public Schools since 2007. She has a BS in Nutrition and Dietetics from East Carolina University, and an AAS in Culinary Arts from Johnson and Wales University.


Pam Phillips

Pam Phillips, MS, RD, LDN, CDE, I received my undergraduate and Master’s from ECU and have worked in the field of nutrition for over 30 yrs. My primary interest has been Food Service Management and Diabetes Education. I have been with Vidant Duplin Hospital for 19 yrs overseeing the Food Service Operation and teaching in the Outpatient Diabetes Program. My interests are camping, cooking and traveling.


Angela Lago

Angela Lago is the Clinical Nutrition Manager at New Hanover Regional Medical Center in Wilmington, North Carolina, where she has been employed since 2008. Angela graduated with a Bachelors of Science in Nutrition from East Carolina University in 1999 and a Masters of Science Degree in Nutrition from East Carolina University in 2006. Angela is a member of the Academy of Nutrition and Dietetics and the Clinical Nutrition Management dietetics practice group and became National Board Certified as a Certified Nutrition Support Clinician in 2009. Angela and her staff take pride in providing Dietetic Interns a well-rounded and dynamic Clinical experience.


Pattie Ramsaur

Pattie Ramsaur has been employed by Southeastern Health for over 30 years. Her tenure has allowed her to work in the hospital as the clinical nutrition coordinator as well as many of the Southeastern affiliated areas including WoodHaven Nursing Center, Gibson Cancer Center, Southeastern Home Health and Hospice, and Southeastern Weight Loss Center. Ramsaur has also been the director of the Food and Nutrition Department. Ramsaur has been a consultant for several long term care facilities. She was a past president of the Fayetteville District Dietetic Association and was a recognized as Young Dietitian of the year. Ramsaur worked with the North Carolina Dietetic Association when Licensure for dietitians/nutritionists began. She received her Bachelor of Home Economics in Nutrition from the University of Tennessee, Knoxville. Ramsaur is also a certified diabetes educator.


Imer Smith

Imer Smith works with New Hanover County Schools as the Child Nutrition Director. She is a member of the School Nutrition Association (SNA) and Academy of Nutrition and Dietetics. Imer earned a nutrition degree and minor in food management from the University of North Carolina at Greensboro and completed her dietetic internship from the same university. She has been involved with the dietetic internship at East Carolina University in Greenville, North Carolina since 2000.


Kirstin Taylor

Kirstin Taylor is the Director of Food and Nutrition at Wayne Memorial Hospital. She attended the University of Oklahoma where she completed the Coordinated Dietetic Program and her Bachelors of Science in Nutrition. After working as a clinical dietitian she returned to school and completed her Masters of Science in Nutritional Sciences at The University of Connecticut. Kirstin now lives in Goldsboro, NC with her husband, Jason and daughter Alexis.
